This split pea soup made in a slow cooker is warm and delicious, perfect for cold days. It is full of healthy ingredients and is cooked slowly and low to bring out the flavors.
Ingredients: 1 lb dried split peas, rinsed. 1 ham hock or 2 cups diced ham. 1 onion, chopped. 2 carrots, diced. 2 celery stalks, diced. 3 cloves garlic, minced. 6 cups chicken or vegetable broth. 1 bay leaf. 1/2 teaspoon dried thyme. Salt and pepper to taste.
Instructions: Split peas, ham hock or diced ham, onion, carrots, celery, and garlic should all be put in a slow cooker. Add chicken or vegetable broth. Put in the dried thyme and bay leaf. Add pepper and salt to taste. Leave the lid on and cook on low for 8 to 10 hours or high for 4 to 5 hours, until the peas are soft and the soup tastes great. Take out the bay leaf and ham hock if used after the food is done cooking. Using an immersion blender, blend the soup until it has the consistency you want. If you want, you can serve it hot and top it with more diced ham or fresh herbs.
