My favorite time of the year is here with warm summer nights and cozy alfresco dinners. . Catch the recipe that is super fun to make and is absolutely delicious. . BAKED RICOTTA CHICKEN with corn and pasta. . For 2 people you will need: 2 chicken breasts 1 large heirloom tomato 2-4 small bell peppers 1 cup of ricotta cheese 2-4 corns on the cob 1 large garlic clove . Favorite pasta ( it’s delicious with gnocchi or tortellini!) . Balsamic Vinegar Danish Creamery Butter Favorite Spices Truffle salt . Rub chicken breasts with a mix of balsamic vinegar, truffle salt and your favorite spices. Let marinade for a minute. In the meantime, thinly slice peppers and tomatoes. Crush garlic. Assemble the foil pockets: place tomatoes as a first layer, add sliced peppers next, then marinaded chicken breasts, add ricotta, and top it all off with a slice or two of Danish Creamery Butter. Fold pockets, grill until the chicken is fully cooked. . Use the waiting time to grill some corn and slather it with Danish Creamery Butter! A touch of truffle salt and I promise you, you’ll have more than one cob ;) . Make it extra fun and set the mood with some candles on the table and good wine. Think “a getaway to Italy”, but created in your own yard.
