This side dish, Marinated Mushroom Skewers, goes great with a grilled steak because they are savory and full of flavor. Adding balsamic vinegar, garlic, and fragrant herbs to the mushrooms gives them a rich flavor that will make your barbecue experience better.
Ingredients: 1 lb fresh mushrooms, cleaned and stems removed. 1/4 cup olive oil. 3 tablespoons balsamic vinegar. 2 cloves garlic, minced. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste. Wooden skewers, soaked in water.
Instructions: Mix olive oil, balsamic vinegar, minced garlic, dried thyme, dried rosemary, salt, and pepper in a bowl. This will make the marinade. Clean the mushrooms and put them in a shallow dish or zip-top bag. Pour the marinade over the mushrooms. Put the dish or bag in the fridge for at least 30 minutes with the lid on or sealed shut so the mushrooms can marinate. Warm up the grill over medium-high heat. Put mushrooms that have been marinated on soaked wooden skewers and then add any vegetables you want, like bell peppers or cherry tomatoes. Put the skewers on a grill that has already been heated up. Cook for 8 to 10 minutes, turning them over every so often, until the mushrooms are soft and lightly charred. Take the mushroom skewers off the grill and serve them as a tasty side dish with grilled steak or your favorite BBQ main dish.
