Ingredients ~3 cups all purpose flour ~2-3 tsp vital wheat gluten 1.25 tsp salt 0.375 tsp active dry yeast 2 c water (possibly 2.25) Method 1. Microwave water 30 seconds, add yeast, wait 5 min 2. Mix the other stuff 3. Add water to flour mixture, wait 10 min 4. Mix with spoon. Should be wet and pliable, kinda like putty. Edges of bowl will still have gunks of flour 5. Cover with saucepan lid and let sit 18 hours, should double+ in size and be bubbly 6. Scrape out of bowl, cut into 2 long rods, fold dough on top of itself, dust with flour or cornmeal, flip that to the bottom. Let sit 1 h 7. Preheat oven with 750ml boiling water inside the oven on bottom baking tray 8. Bake 450 F 15 minutes 9. Bake 425 F 15 minutes 10. Bake 350 F 10 minutes
