This Spicy Strawberry BBQ Sauce is a tasty change from regular barbecue sauce. It has the sweetness of strawberries and a kick of heat. Spread it on grilled tofu, vegetables, or your favorite vegan snacks to make them taste even better.
Ingredients: 1 cup strawberries, hulled and chopped. 1/4 cup tomato paste. 2 tbsp maple syrup. 2 tbsp apple cider vinegar. 1 tbsp soy sauce. 1 tsp smoked paprika. 1/2 tsp garlic powder. 1/4 tsp cayenne pepper adjust to taste. Salt and pepper to taste.
Instructions: Chop up strawberries and put them in a saucepan. Add tomato paste, maple syrup, apple cider vinegar, soy sauce, smoked paprika, garlic powder, and cayenne pepper. Over medium-low heat, bring the mixture to a simmer. Then, lower the heat to low and let it cook for 10 to 15 minutes, stirring every now and then, until the strawberries are soft and the sauce is thick. Take the sauce off the heat and let it cool down a bit. Put the sauce in a blender or use an immersion blender to make it smooth. Add pepper and salt to taste. You can use it right away or put it in the fridge in an airtight container for up to a week.
