BUTTERSCOTCH PIE. (my first no-bake pie!)
So, I have to admit. I haven't really kept up with this blogging thing like i said i would. I'm sorry. Life has been a complete whirlwind lately. While we are enjoying the exercise, we are stopping to take a moment at times too.
This was Pie #4 - The Butterscotch Pie for my friend, Kim. She's a fighter. I'm so envious of her biceps and strength. Not just externally but internally also. She's the friend that you admire. Simply because when you know you'd lose it and cry Justin Timberlake's river, she keeps it together. Always determined to succeed. She keeps me motivated. Her laugh. It's contagious. She tells me stories of things that she's done, that I could only dream of doing. And she is a friend that is always here if i ever need her. She's got my back. Always.
She's more like a sister.
There are many days, i don't know what i'd do without her.
BUTTERSCOTCH PIE:
The Lady and Sons: Savannah Country Cookbook - Paula H. Deen
Serves 6 to 8
3/4 cup brown sugar
5 tablespoons all-purpose flour
1/2 teaspoon salt
2 cups milk
2 egg yolks, lightly beaten
2 tablespoons butter (double for a richer butterscotch taste)
1 teaspoon vanilla (double for a richer butterscotch taste)
One 9-inch pre-baked pie shell
Combine sugar, flour and salt and stir in milk slowly. Cook in double boiler over boiling water until thickened, stirring constantly. Cover and cook 10 minutes longer, stirring occasionally. Add small amount of hot mixture to egg yolks, stirring rigorously. Add back to pot and cook 1 minute longer. Add butter and vanilla and cool. Place filling in pastry shell and cover with whipped cream or meringue.
