Yesterday was magical, I found this coconut flour at a shop that sells all things organic and boy, was I excited! Those who know me know how much I love everything coconut. I can’t wait to start cooking and baking with it.

Technically, I already did. The first thing I made this morning was sugar-free coconut pancakes! They don’t look appetising but they were very flavourful and tasted good on its own.

Something I want to point out is the texture - while it’s fluffy, the pancakes are sort of dense and “flaky” at the same time. It’s not a bad thing, unless you’re too used to store bought pancakes or the normal recipe that calls for wheat flour.

Another thing about coconut flour is it’s very “thirsty”, as what health freaks call it. Haha. Make sure you bind them with enough eggs, flax seeds powder or guar because baked goods with coconut flour tend to fall apart. They brown pretty fast too. Overall, I’m quite happy with my purchase. 😊
