ingredients:
- 8 spring onions - Packet of couscous - 4 red peppers, halved and deseeded - 160g feta, cubed - olive oil - salt and pepper
recipe:
1. Preheat the oven to 190 °C. 2. Fry the spring onions with the salt and pepper some oil in a pan over a medium heat until they start to brown. 3. Just as they start to colour, add the couscous to the pan with about 80ml water. Remove from the heat. After 5 mins the couscous should have doubled. 4. Add the cubed feta to the couscous and stuff the mixtures into pepper halves. If you would like extra cheese, some grated cheddar can be put on top! 5. Place the peppers on a baking tray and cook in the oven for 20 mins, when the edges of the peppers should begin to char.
