Ingredients: 1 large tomato. 2 slices of ham. 1 egg. 4 asparagus spears. Fresh herbs e.g., basil, thyme, parsley. Salt and pepper to taste. Olive oil for grilling.
Instructions: Cut the top off the tomato and scoop out the seeds and some of the flesh to create a hollow cavity. Season the inside of the tomato with salt and pepper. Wrap each asparagus spear with a slice of ham and insert them into the tomato cavity. Crack an egg into the tomato on top of the ham-wrapped asparagus. Sprinkle fresh herbs over the egg and season with more salt and pepper if desired. Brush the outside of the tomato with olive oil. Preheat a grill to medium-high heat and place the stuffed tomato on the grill grates. Grill for about 10-15 minutes or until the egg is cooked to your liking and the tomato is slightly softened. Remove from the grill, let it cool slightly, and serve hot.
