Soo my friend @sakuranbonotanechan visited and we wanted to cook together. And who doesn’t like Mousse Au Chocolat? This recipe got a few helping hands to make it perfect, but they are not necessary.
Ingredients:
-100 grams of dark chocolate (trust me, at least 60% cocoa, but better with 70-80) -3 eggs -1 cup of cream (~150 mL) -2 tablespoons of sugar (or less)
MAKING THE MOUSSE
1) Melt the chocolate. Put a bit of butter in it (1-2 teaspoons). With the butter, the melted chocolate will cool without getting hard too fast again. Let it cool a bit, stir once in a while.
2) Whip the cream.
3) Separate egg yolks and whites.
4) Whip the egg whites (no nae nae) Kirsch help: put a tiny bit of salt in before whipping, it will be more “solid”
5) Stir the yolk until it is frothy (hell if i know if this is the right word, if not Uhh foamy? Put some air in there). Nen help: Put ~1-2 Tablespoons of warm ( not quite boiling hot but pretty hot) water in there. Makes it easier.
6) Put the sugar in the bowl with the fluffy yolks ( yes I’m just using a lot of different words now) and mix (gently).
Now it should look like the first pic.
7) Get the cooled chocolate (not hot or the egg will get cooked and bleurgh. Better to wait a bit more, also Chances is you get little solid chocolate pieces in there) and GENTLY mix it in (manually).
8) VERY gently mix in the egg whites (MANUALLY). See the second picture. Kirsch help: Don’t hit the whisk/ spoon/ whatever on the bowl to get remains in. It can make the egg white go fluid again ( not all but a bit)
9) Gently stir in the whipped cream, same rules as for the egg whites. The more you stir, the fewer air.bubbles will be in it so don’t stir too much. See picture 3.
10) Pour into a bowl (you can cool it before but not necessary) and cool for at least two hours. For me, putting it in the basement is enough.
11) DONE! FRIGGIN ENJOY THE CREAMY DELICIOUSNESS!
