Grilling Rooftop Pies
Week two of our CSA ingredients and a couple trips to Greenpoint Meat + Cheese gave us a delicious idea: pizza, rooftop style. Bayley Hazen Blue cheese from Jasper Hill Farm, spicy Italian meat, figs, plenty of veg and a charcoal grill with cherry wood chips was all we needed to get the smoky job done. Here’s how we put it all together:
Pizza 1: Blue cheese, tomato, spinach, olive oil and garlic scapes. Pizza 2: Spicy meat, blue cheese, basil and olive oil. Pizza 3: Figs, fresh tamarind, basil, blue cheese, olive oil with spicy meat on half. Pizza 4: Basil, tomato, blue cheese, garlic scapes and olive oil.
The fudge-like texture of the Bayley Hazen blue made it easy to crumble over the pies, and the grassy taste mized well with the meat and vegetables. We grilled so much deliciousness that it was hard to pick a favorite, but pizzas 2 and 4 got my vote. Need to put this down to go enjoy more, thanks to Greenpoint Meat + Cheese for the good stuff!
White Summer Pizza with Veggies
Summer vegetables find a nice and cozy resting place in this marriage of dough and plants. In this white summer pizza, I baked some fresh pizza dough and sprinkled some mozzarella cheese on top. I grilled peppers and squash, placing these in alternating fashion throughout the dish. I threw some chopped tomatoes, grilled red onions, corn, garlic, spinach, fresh herbs, and parmesan on top. I need a pizza stone with which to cook pizzas, but I'm becoming very good at throwing dough on parchment paper onto the oven grill, which was my strategy with this one. This pizza turned out phenomenally, but a pizza stone would have really moved the crust into that nice brown color. The pizza was exceptional--not perfect. It keeps me humble, a pizza like this.
I'll be tucking this one away for a stay-at-home movie night.
