Creamy Zucchini and Lemon Verbena Soup adapted from Patricia Well's The Provence Cookbook

How gorgeous is this?  Maggie's Farm was selling single stems of highly perfumed Lemon Verbena for $1 at the Venice Farmer's Market this week...

Steam about a pound of small zucchini, chopped, with several sprigs of fresh lemon verbena.  Remove and discard the verbena.  Puree the zucchini in a blender.  Add one cup of  low fat thick yogurt and blend until smooth and creamy.  Chill.  Serve garnished with a chiffonnade of verbena leaves... summer bliss
