Summer-Style Mince Noodles
Serves 4.
Ingredients:
125g Ramen noodles
100g mange tout, sliced
100g radishes, sliced
6 spring onions, sliced
150g beansprouts
1 bunch coriander, roughly chopped
1 tbsp sunflower oil
1 tsp chilli flakes
1 clove garlic, chopped
1 tsp chopped lemongrass
2 tsp coarsely grated root ginger
500g pork mince
2 tsp Thai fish sauce
1 tbsp light soy sauce
For the dressing:
400g pot of sliced mango in juice, drained
80ml coconut milk
Juice of 1 lime
½ tsp chilli flakes
Method:
Cook the noodles according to packet instructions, then drain and rinse under cold water. Place the noodles in a large bowl with the mange tout, radishes, spring onions and beansprouts, and three-quarters of the coriander, reserving the rest for the dressing.
Heat the sunflower oil in a frying pan. Add the chilli, garlic, lemongrass and ginger, cook for 1 minute, then add the pork mince and cook over a high heat for 10 minutes until golden, breaking up any clumps with a spatula.
Add the fish sauce and soy sauce to the pork mince, and keep stirring until evaporated. Add to the noodles.
Meanwhile, make the dressing. In a food processor, blend together the mango slices, coconut milk, lime juice, chilli and the reserved coriander until smooth. Stir through the noodles just before serving.
