Ingredients: 4 chicken breasts, boneless and skinless. 2 cups cherry tomatoes, halved. 2 cups zucchini, sliced. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 onion, thinly sliced. 3 cloves garlic, minced. 1 lemon, juiced. 1 lime, juiced. 2 tablespoons olive oil. 1 teaspoon dried thyme. 1 teaspoon dried oregano. Salt and pepper to taste.
Instructions: Add the olive oil, minced garlic, thyme, oregano, salt, and pepper to a bowl. Then add the lemon juice and lime juice. The citrus marinade should be poured over the chicken breasts that have been put in the slow cooker. Make sure that the chicken is covered all over. On top of the chicken, put squash, bell peppers, onions, and cherry tomatoes. The chicken should be fully cooked and the vegetables should be soft. Cover and cook on low for 4 to 6 hours. If you want, you can serve it hot and top it with fresh herbs.
