The ideal ratio of freshness and spice can be found in this tasty jerk tofu and vegetable dish. The vegetables are expertly sauted, and the tofu is marinated in jerk seasoning and baked until crispy. It's a simple dinner that is filling and healthy.
Ingredients: 1 block firm tofu, pressed and cubed. 2 tablespoons jerk seasoning. 2 tablespoons olive oil. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 1 onion, sliced. 1 zucchini, sliced. Salt and pepper to taste.
Instructions: Set oven temperature to 400F 200C. Toss cubed tofu with olive oil and jerk seasoning in a bowl until well coated. Arrange the tofu onto a baking sheet and bake it for 25 to 30 minutes, rotating it halfway through, or until it becomes crispy. Meanwhile, place a large skillet over medium heat with olive oil. Add zucchini, onion, and bell pepper slices to the skillet. To taste, add salt and pepper for seasoning. Saut the vegetables for 8 to 10 minutes, or until they are crisp-tender. Take the crispy tofu out of the oven and serve it with sauted vegetables. Savor your veggies and tasty jerk tofu!
