Instructions: Preheat your oven to 350F 175C and line a cupcake pan with paper liners. In a mixing bowl, combine the cupcake mix, vegetable oil, eggs, and water. Mix until well combined. Stir in the chocolate chips and chopped nuts if desired. Pour the cupcake batter into the lined cupcake pan, filling each cup about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and allow them to cool completely on a wire rack. Once the cupcakes are cool, use a cupcake corer or a knife to create a hole in the center of each cupcake. Fill each hole with a maraschino cherry. Top each cupcake with a scoop of vanilla ice cream. Drizzle chocolate sauce over the ice cream. Add a dollop of whipped cream on top of the ice cream. Sprinkle with your favorite sprinkles. Serve immediately and enjoy your delicious Ice Cream Sundae Cupcakes!
