#SuperSimpleSupper . They are my Go To type of meals. Most week nights we either have class, I train or have a webinar, group coaching or whatever going on. You know...life. . That's one reason I love 1 pot/pan meals. Another of course is less clean up. . Last night's concoction was a simple stir fry. Get in the protein and high fiber veggies all at once :) . 1.5 -2lbs chicken 2 bags of frozen stir fry veggies 2 eggs 1Tbs olive oil 1/2 cup brown basmati rice. (I pre-cooked it) Seasning to taste Low sodium Soy sauce to taste . This is the recipe for a double batch so I could have some for Eric to take for lunch for a couple days . While I cooked this in an electric skillet, it can also be done on the stove in a large skillet or pot as well. . Heat oil, add chicken, stir for a min or so, add veggies, crack eggs over mixture, add seasonings of choice. Stir till chicken is almost done. Add cooked rice and soy sauce to taste.
