These iced gems are vegan, gluten-free, and a delicious treat that can be used for any event. Colorful, crunchy, and topped with a sweet icing, these treats are a hit with both vegans and non-vegans.
Ingredients: 1 cup gluten-free all-purpose flour. 1/2 cup almond flour. 1/2 cup vegan butter, softened. 1/3 cup powdered sugar. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt. 1-2 tablespoons non-dairy milk. Food coloring optional. 1 cup powdered sugar for icing. 1-2 tablespoons non-dairy milk for icing. Sprinkles or decorations optional.
Instructions: Warm your oven up to 350F 175C and put parchment paper on a baking sheet. The vegan butter should be soft, and the powdered sugar should be mixed together in a bowl until the mixture is light and fluffy. Mix in the vanilla extract until it's all well mixed in. Add the almond flour, gluten-free all-purpose flour, and salt to the mixture little by little. Mix until you get a dough. If the dough is too dry, add a tablespoon or two of nondairy milk at a time until it comes together. You can divide the dough into pieces and color each piece with food coloring if you want to. Mix until the color is spread out evenly. Make little balls out of the dough and put them on the baking sheet that has been prepared. To make them flat, press each ball down a little. After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden. Take the gems out of the oven and set them on a wire rack to cool completely. As the gems cool, make the icing by mixing powdered sugar with non-dairy milk until the icing is thick but still pourable. Pour the icing over each gem once they are completely cool, and if you want, add sprinkles or other decorations. Wait until the icing is set before you serve it.
