This dish is a quick and easy vegan alternative to scrambled eggs with goat cheese. It has crumbled tofu that has been seasoned with nutritional yeast and spices, sauted Swiss chard, and vegan goat cheese on top to make it creamy.
Ingredients: 1 block extra-firm tofu, crumbled. 2 tablespoons nutritional yeast. 1 tablespoon lemon juice. 1 teaspoon garlic powder. 1 teaspoon onion powder. Salt and pepper to taste. 1 bunch Swiss chard, chopped. 1 tablespoon olive oil. 2 tablespoons vegan goat cheese store-bought or homemade. Fresh parsley for garnish.
Instructions: In a bowl, mix crumbled tofu with nutritional yeast, lemon juice, garlic powder, onion powder, salt, and pepper. Heat olive oil in a skillet over medium heat. Add chopped Swiss chard and saut until wilted. Pour tofu mixture into the skillet with Swiss chard. Cook, stirring occasionally, until tofu is heated through and resembles scrambled eggs, about 5-7 minutes. Crumble vegan goat cheese over the scramble and stir until melted and evenly distributed. Garnish with fresh parsley before serving.
