I know I haven't been cooking as much as I used to. And it's a shame as I find it therapeutic. While I enjoy cooking for myself, I found more joy in cooking for others so maybe that's why I haven't been as much. Also, working 5 days a week keeps me busy. Anyway, decided to do something quick & easy. Swordfish tacos! Here goes: - Swordfish: Cut swordfish up into small chunks. Seasoned w/ salt/pepper/hot paprika & covered in olive oil. Let marinate a bit. Put in pan to sear. Added butter & lime juice & mixed well. Added white wine. I decided on tacos at last minute (as I was just going to put it over a salad but saw I had some tortillas, salsa, guacamole salsa, cheese, etc). I threw in the guacamole salsa & let the fish simmer in it for a bit. - Heated up tortillas & melted gruyere cheese (only cheese I had) on them. Put in swordfish. Topped w/ salad & some salsa. That's it! - Result: So simple and deelish. I do wish I had ran out and gotten some sour cream & cheddar cheese but it was still real good. I think next time I wouldnt have added the guacamole salsa or at least not as much.
