Kashmir is famous for growing many spices and nuts which are sold throughout India. These spices are also used in many different dishes from this region giving them a nice taste. Also used extensively in the region is meat such as mutton. Tabak Maaz forms a substantial part of Kashmiri wazwan. Featuring typically Persian spices, the ribs are marinated overnight to allow the meat to soften and are then cooked until tender. A last-minute dip in the frying pan guarantees all the flavours are sealed in. Tabak Maaz, it is a must in every wedding or any grand occasion. After trying at @overthemoonbrewco and @siestahitech in their Kashmiri Food Festival, I was excited to have it the region but alas it wasn't to my liking. The meat was cooked too hard and almost rubbery.
