These Taco Stuffed Pasta Shells are a great mix of Italian pasta and Mexican flavors. This easy recipe makes jumbo pasta shells that are filled with a tasty beef mixture that tastes like tacos and topped with melty cheese.
Ingredients: 1 pound jumbo pasta shells. 1 pound ground beef. 1 packet taco seasoning mix. 1 cup salsa. 1 cup shredded cheddar cheese. 1 cup shredded Monterey Jack cheese. 1 can 15 ounces black beans, drained and rinsed. 1 can 4 ounces diced green chilies. 1 cup sour cream. 1/4 cup chopped fresh cilantro. Salt and pepper to taste.
Instructions: Preheat oven to 350F 175C. Cook pasta shells according to package instructions until al dente. Drain and set aside. In a skillet, brown ground beef over medium heat. Drain excess fat. Add taco seasoning mix, salsa, black beans, and diced green chilies to the skillet with the ground beef. Cook for 5 minutes, stirring occasionally. Remove skillet from heat and let it cool slightly. Stir in sour cream and chopped cilantro. Season with salt and pepper to taste. Fill each cooked pasta shell with the beef mixture and place them in a baking dish. Sprinkle shredded cheddar and Monterey Jack cheese over the stuffed shells. Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 5-10 minutes until cheese is melted and bubbly. Garnish with additional chopped cilantro if desired. Serve hot and enjoy!
