These Low Carb Gluten Free General Tso Meatballs are a better way to eat the popular takeout dish. These meatballs are made with gluten-free ingredients and ground chicken or turkey. They are very tasty and make a great meal.
Ingredients: 1 lb ground chicken or turkey. 2 cloves garlic, minced. 1 tablespoon grated ginger. 2 green onions, finely chopped. 1/4 cup almond flour. 2 tablespoons coconut aminos. 1 tablespoon sesame oil. 1 tablespoon rice vinegar. 1 tablespoon sriracha sauce optional. 1 tablespoon erythritol or preferred low-carb sweetener. 1 tablespoon olive oil. Salt and pepper, to taste. Sesame seeds, for garnish. Chopped green onions, for garnish.
Instructions: Preheat oven to 375F 190C. In a large bowl, combine ground chicken or turkey, minced garlic, grated ginger, chopped green onions, almond flour, coconut aminos, sesame oil, rice vinegar, sriracha sauce if using, erythritol, olive oil, salt, and pepper. Mix until well combined. Form the mixture into meatballs and place them on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and browned. Remove from the oven and garnish with sesame seeds and chopped green onions. Serve hot with your favorite low-carb dipping sauce or over cauliflower rice. Enjoy!
