A comforting and flavorful casserole dish featuring creamy mashed potatoes mixed with cheese, sour cream, bacon, and chives, baked to perfection.
Ingredients: 6 large potatoes, peeled and diced. 1 cup shredded cheddar cheese. 1/2 cup sour cream. 1/4 cup chopped chives. 4 slices bacon, cooked and crumbled. Salt and pepper to taste.
Instructions: Preheat oven to 375F 190C. Boil diced potatoes until tender, then drain and mash lightly. In a large mixing bowl, combine mashed potatoes, shredded cheddar cheese, sour cream, chopped chives, and crumbled bacon. Season with salt and pepper to taste. Transfer mixture to a greased casserole dish and spread evenly. Bake in preheated oven for 25-30 minutes, or until cheese is melted and bubbly. Garnish with additional chives and serve hot.
