Ingredients: 3 ripe bananas, mashed. 1/3 cup melted coconut oil or vegetable oil. 1/2 cup maple syrup or agave syrup. 1 teaspoon vanilla extract. 1/2 teaspoon ground cinnamon. 1 3/4 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt.
Instructions: Preheat the oven to 350F 175C. Grease a 9x5 inch loaf pan or line it with parchment paper. In a large mixing bowl, combine mashed bananas, melted coconut oil, maple syrup, vanilla extract, and cinnamon. Add the flour, baking soda, and salt to the banana mixture. Stir until just combined, being careful not to overmix. Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve. Enjoy!
