These zucchini fritters, known as Kolokitho Keftedes, are a delicious vegan appetizer perfect for parties. They are crispy on the outside and tender on the inside, bursting with flavor from the combination of zucchini, onions, garlic, and fresh herbs.
Ingredients: 2 medium zucchinis, grated. 1 small onion, finely chopped. 2 cloves garlic, minced. 1/2 cup chickpea flour. 1/4 cup nutritional yeast. 1 teaspoon baking powder. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 cup fresh parsley, chopped. 2 tablespoons olive oil.
Instructions: Grate zucchini, chop onion, mince garlic, add chickpea flour, nutritional yeast, baking powder, salt, black pepper, and chopped parsley to a large bowl. Mix the ingredients together well until they are all evenly mixed in. Warm up a big pan with olive oil over medium-low heat. Take about two tablespoons of the zucchini mix and shape it into patties. They should be cooked for three to four minutes on each side, or until they are golden brown and crispy. Place the fritters on a plate with paper towels on it so that any extra oil can drain. Warm it up and serve it with vegan yogurt or your favorite dipping sauce.
