The comforting tastes of tater tots, eggs, and bacon wrapped in nori seaweed make this breakfast sushi roll a great change from regular sushi. It's a great mix of Japanese and American breakfast favorites!
Ingredients: 8 strips bacon. 4 large eggs. 2 cups frozen tater tots, cooked according to package instructions. 2 nori seaweed sheets. Soy sauce, for serving optional. Sriracha, for serving optional.
Instructions: Cook bacon in a skillet over medium heat until crispy. Drain on paper towels and set aside. In the same skillet, scramble the eggs until fully cooked. Remove from heat and set aside. Place a sheet of nori on a bamboo sushi mat, shiny side down. Spread half of the tater tots evenly over the nori sheet, leaving a small border at the top edge. Top with half of the scrambled eggs, followed by half of the cooked bacon. Using the bamboo mat, tightly roll up the nori sheet into a cylinder shape, pressing gently to seal the edge. Repeat with the remaining ingredients to make a second roll. Slice each roll into 6 pieces using a sharp knife. Serve immediately with soy sauce and Sriracha, if desired.
