I call it “New England Oolong” - A lightly oxidized, pan-fired, green oolong crafted right here in Boston.
1) Wither leaves ~1 hour until red tipped.
2) Pan fire at medium heat (30 seconds - 1 minute) listen for sizzling, turn leaves constantly
3) Transfer to glass bowl, turning leaves constantly & hand-roll / mascerate / bruise the leaves until they cool down
4) Repeat steps 2 & 3 moving through grassy fragrance phase until leaves smell sweet, mellow even buttery.
5) Dry leaves in oven at 170 fahrenheit ~30 minutes
6) Let sit in tin for 1 day to further develop flavor.
