have decided to test our focaccia bread using sourdough starter in the bread recipe. Not only will it be sourdough, kefir will be added. Kefir with the whey liquid separated so it is more like chunky cheese. The dough will be mixed tonight and left to rise to bake tomorrow. I am pretty excited to explore if this will work or not. Trying to find ways to integrate the sourdough and kefir due to the continuous supply of it culturing. OMG! The probiotics in the kefir will be lost however the calcium and B Vit will still be there nutritionally. The brain needs B Vitamins, fyi.
