Cowboy Chicken Quesadillas are a Tex-Mex take on a traditional quesadilla. They are full of tasty things like shredded chicken, cheddar cheese, and fresh vegetables. Great for a quick and filling meal!
Ingredients: 2 cups cooked chicken, shredded. 1 cup shredded cheddar cheese. 1/2 cup diced tomatoes. 1/4 cup diced red onion. 1/4 cup diced bell pepper. 1/4 cup chopped cilantro. 4 large flour tortillas. 2 tablespoons vegetable oil.
Instructions: Cheddar cheese, diced tomatoes, red onion, bell pepper, and cilantro should all be mixed together in a bowl. Lay out a tortilla on a flat surface. Cover half of the tortilla with turkey mixture. To make a half-moon shape, fold the other half of the tortilla over the filling. In a pan over medium heat, heat 1 tablespoon of vegetable oil. It will take about two to three minutes on each side to cook the quesadilla until it is golden brown and crispy. Do this again with the rest of the quesadillas, adding more oil to the pan if needed. After the quesadillas are done cooking, take them out of the pan and let them cool a bit before cutting them into wedges. Serve hot with sour cream, salsa, guacamole, or salsa to dip.
