These vegan Northern Mexico Chimichangas are a delicious and healthy twist on the classic Mexican dish. They are filled with flavorful jackfruit, black beans, and spices, then fried to crispy perfection. Enjoy them with your favorite toppings for a satisfying meal.
Ingredients: 2 cups cooked and shredded jackfruit. 1/2 cup diced onion. 2 cloves garlic, minced. 1/2 cup diced bell pepper. 1/2 cup cooked black beans. 1/2 cup corn kernels. 1 teaspoon ground cumin. 1 teaspoon chili powder. Salt and pepper to taste. 1/4 cup chopped fresh cilantro. 4 large flour tortillas. 1 cup vegan cheese, shredded. Oil for frying.
Instructions: Add a little oil to a large skillet and cook the onion and garlic until they become clear. Cumin, chili powder, salt, pepper, black beans, corn, and bell pepper should all be added. It will take about 5 minutes of cooking to get the mixture hot and well mixed. Add the chopped cilantro and mix it in. Then turn off the heat. Put some of the jackfruit mixture on each flour tortilla, then add vegan cheese on top and fold the sides in. Use the tortillas to make chimichangas by rolling them up. Put about 1/4 inch of oil in a different pan and heat it over medium-high heat. Put one chimichanga at a time into the hot oil seam-side down. Fry until golden brown, turning the pan around to cook all sides. Take the chimichangas out of the oil and lay them on paper towels to soak up the extra oil. Add your favorite toppings, like salsa, guacamole, or vegan sour cream, to your Northern Mexico Chimichangas while they are still hot.
