This Lovely Thai Pad Stirfry is a quick and flavorful dish that combines tender chicken, colorful vegetables, and a delightful Thai-inspired sauce. It's perfect for a busy weeknight dinner!
Ingredients: 2 tablespoons vegetable oil. 1 pound boneless chicken breast, thinly sliced. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 onion, thinly sliced. 2 cloves garlic, minced. 1 cup broccoli florets. 1/2 cup snap peas. 1/2 cup carrots, thinly sliced. 1/4 cup Lovely Thai Pad Sauce. Salt and pepper to taste. Cooked rice or noodles for serving.
Instructions: In a large skillet or wok, heat the vegetable oil over medium-high heat. Stir-fry the chicken slices for two to three minutes, or until they begin to brown. Stir-fry the minced garlic for an additional thirty seconds after adding it. To the skillet, add the sliced bell peppers, carrots, onion, broccoli, and snap peas. Stir-fry the vegetables for 45 minutes, or until they are crisp-tender. Over the stir-fry, pour the Lovely Thai Pad Sauce and toss to coat everything evenly. Simmer for two more minutes.
