Vegan Red Curry Thai Tofu is a fragrant and tasty dish made with soft tofu, spicy red curry paste, creamy coconut milk, and a bunch of different colored vegetables. It has just the right amount of sweet, savory, and spicy flavors to make it a satisfying meal for any event.
Ingredients: 1 block extra-firm tofu, pressed and cubed. 2 tablespoons red curry paste. 1 can coconut milk. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 onion, sliced. 2 cloves garlic, minced. 1 tablespoon ginger, minced. 2 tablespoons soy sauce. 1 tablespoon maple syrup. 1 tablespoon lime juice. 1 tablespoon coconut oil. Fresh cilantro, for garnish. Cooked rice, for serving.
Instructions: Put coconut oil in a large pan and heat it over medium-low heat. Add the minced garlic and ginger and cook for about one minute, until the smell is nice. After you add the red curry paste, cook for one more minute. After you add the cubed tofu, cook for about 5 minutes, or until all sides are lightly browned. Add the lime juice, soy sauce, maple syrup, and coconut milk. Use a stir to mix. Slice the onion and bell pepper and add them to the pan. Simmer for 10 to 15 minutes, or until the vegetables are soft and the flavors are well mixed. Place on top of cooked rice and top with fresh cilantro. Have fun with your vegan Thai red curry tofu!
