Luz, Lumity, and Reliability
A common theme I've noticed with Luz is her wanting people she can rely on, and in turn to be a reliable person herself, but so many people in her life just aren't. Her human school wasn't reliable, Hexside isn't reliable, and in many ways her own mum wasn't reliable, at least in terms of supporting her ambitions and interests. She's great when it comes to supporting Luz's basic needs, but she fails when it comes to supporting her wants.
This brings me to her relationship with Amity, because I think she's very similar to Camila in that regard. She also greatly prioritises Luz's safety, but often doesn't support her goals, usually because they'd conflict with her staying safe. She tells Luz not to go through with the grudgby match, not to negotiate with her mother, doesn't stand up for her in the Principal's office, and even locks her in a cage just to stop her from fighting a monster.
All of this does come from a place of love, but it's not the kind of love that Luz wants. She appreciates it, just like she appreciates her mum's love, but she wants more. I think that's why she didn't reciprocate Amity's feelings until now, what she'd want from a partner would be someone she can rely on to support her entirely, not just to protect her.
Imprisoning someone inside an electrified force field to keep them away from danger is a total win when it comes to supporting their safety, but a total failure when it comes to respecting their decisions.
In that scene where she's kneeling down and handing Amity her books, the symbolism isn't just superficial, she's asking Amity for a commitment, to be supportive of her goals. At the time, she couldn't, because keeping Luz safe was more important to her, but after she got in danger anyway, I think she saw the necessity of giving her that kind of support.
Luz fell for Amity in that final scene, because Amity was giving her the unconditional support she's always wanted, the kind she's only really gotten from afew other people. Because she wasn't just keeping her safe, she was actively helping her to defeat the abomination, and blackmailing her parents into undoing the harm they'd caused.
I really want Amity and Camila to meet, I'm sure they'd understand each other well. But I also think that Amity could teach her about the kind of support that Luz needs.
I'm also really excited for 'Through the Looking Glass Ruins', where Amity will continue being supportive by taking her into the forbidden section of the library.

This scene broke my heart because I remembered her from the pilot where Luz helped her escape and now she's back in prison for doing what she thinks is right :'(

"Looks like mittens is getting... distracted"
This line is important, because it's the only time Odalia expresses an objection to Amity's friendships without a facade.
She's not talking to anyone but herself, and it's her initial reaction to this situation. Every other time she's expressed such an objection, both in 'Understanding Willow', and later in this same episode, she's having to justify her objections to someone else, after presumably having had some time to think of excuses and prepare a speech.
Because of this, I think that line is most representative of her real reasons for not wanting Amity to be friends with those three, and it's... Absolutely Horrible!
Like, all Luz&co have done to cause this is be good friends to Amity, enough that she's emotionally attached to them, enough that she'd want to save a photo of them, and more to the point, enough that she might prioritise them over her parent's interests. The fact that Amity has friends, has anything she cares about that isn't school, career, and helping the family business, is a BAD thing to Odalia.
Imagine that kind of mindset! Imagine seeing your own child make a friend, who's supportive, kind, and all around good to them, and the only thought that comes into your mind is "damnit, now they'll be less focused on helping me scam customers into buying my faulty products", and that angers you enough to sabotage their friendship. That's... evil!
What really drives home how evil this is, is that the archetype we previously thought she was; the snooty, overly judgemental, prejudiced, upperclass parent, was an act! An act that she puts up to disguise the fact that she just wants to isolate Amity, to deprive her of finding joy in anything that she herself doesn't benefit from. She's such a horrible person, that she has to put up the facade of a different type of horrible person just to make herself look better!
