"Cleaner" Pumpkin Muffins
I try to eat clean, but believe that what I practice can be more accurately described as “cleaner” eating. Yesterday we made pumpkin muffins that I “cleaned up” along the way, they turned out wonderfully! If you try them, I’d love to know what you think! Cleaner Pumpkin Muffins Preheat oven to 375 degrees. Spray or line a 12 cup muffin tray.
1/4 cup wheat germ
1 cup all-purpose flour
1/2 cup whole grain flour
2 tsp cinnamon
1 tsp all-spice
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup canned pumpkin (not pie filling!)
Mix all of the above (dry ingredients) in a large bowl.
1/2 greek yogurt
1/2 cup organic liquid honey
1/4 cup melted coconut oil
1 egg
1 tsp(ish) vanilla
Mix all of the above (wet ingredients) in a medium bowl.
Add the wet ingredients to the dry and stir with a wooden spoon. Using an ice cream scoop, scoop batter into prepared muffin tins.
Bake at 375 for 20-22 minutes or until done. *Optional, after cooling, create a hole in the centre with the end of a wooden spoon or chopstick and fill with frosting*
