Ingredients: 2 cups vegan chocolate chips. 1/2 cup coconut cream. 1 tsp peppermint extract. 1/2 cup crushed vegan chocolate cookies. 1/4 cup cocoa powder.
Instructions: Melt chocolate chips and coconut cream in a heatproof bowl over simmering water, stirring until smooth. Stir in peppermint extract and crushed cookies. Chill mixture for 1-2 hours until firm. Scoop out small portions and roll into balls. Roll balls in cocoa powder to coat evenly. Chill truffles until ready to serve.
