Yum yum YUM! This recipe was some kind of magic . . . I had a leftover can of pumpkin puree from my adventure in pumpkin French toast (which this was MUCH more successful than, tbh) and I knew I was making pasta, so I decided to google recipes for vegan pumpkin pasta sauce! The one that came up called for three cloves of garlic which is EXACTLY what I had, as well as the EXACT amount of almond milk I had left over - and I had all the spices! It was just crazy convenient and by far the most delicious thing I’ve ever been able to throw together out of ingredients I already had!
The one thing I didn’t have was cornstarch, and with research I made the call to sub the one tablespoon of cornstarch for three tablespoons of flour and it worked just beautifully :) This was crazy easy and a lot of fun and a LOT of delicious.
