My halang-halang recipe today is actually derived from my family's recipe. Key ingredients are tinunuan or coconut milk, sili or chilis, and tanglad or lemongrass. Halang-halang means “spicy-spicy” in Bolanon and it’s what I cooked during rainy days in Manila. Today it holds an even more important role: bringing us warmth and familiarity from far, far away in the UK.
