a while ago, i had a fairly vivid dream about papyrus being in deltarune. part of it was from his perspective. he was trapped somewhere, and had a hand circled around a bar. it was dark enough that you could only see what was directly in front of him, which was just the bright colors of his glove against the total black of the void

Like wdym they have to deal with divorced parents, a brother they feel over shadowed by, an entity possessing them, being an outcast in their town, getting bullied like 3 days ago by their now best friend, close friend being missing and they blame themself about it, violent intrusive thoughts that they have to deal with, seeing an eldritch horror being at the age of 9, forced to betray their friends and depression

We don't know much about Grillby, sadly, but we do know that he rarely talks. He can talk, yes, but rarely does. We also know he's scared of water! Which... is fair enough. For that reason, I personally headcanon him to be a patient, quiet, and calm person. Pretty funny, cause I think he's the opposite of hot-headed (do you get it... please tell me you do...)
I think a lot of people go with that direction and it works really well!
