Often touted as the national dish of China, “Stir-fried tomato and scrambled eggs” is a simple, classic, common dish that’s hearty and goes so well with rice or noodles. Not to over-generalise but this dish is the most basic cooking the majority of Chinese would know - equivalent to cooking two minute noodles. Often, the first question when someone asks your cooking repertoire in China: it would begin with “Can you cook stir-fry Tomato and eggs?” 😂 I love eating this dish whenever visiting China but it’s not as simple as it looks to truly master the dish. The scrambled eggs should be very fluffy and soft when cooked properly. Personally I still don’t think I’ve mastered the dish.
