Creamy Tuscan Pasta is a delightful dish that combines the richness of heavy cream and Parmesan cheese with the freshness of cherry tomatoes and spinach. It's a quick and easy recipe perfect for a cozy dinner at home.
Ingredients: 8 oz penne pasta. 2 tbsp olive oil. 4 cloves garlic, minced. 1 cup cherry tomatoes, halved. 2 cups spinach leaves. 1 cup heavy cream. 1/2 cup grated Parmesan cheese. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Cook penne pasta according to package instructions until al dente. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add minced garlic and saut until fragrant, about 1 minute. Add cherry tomatoes to the skillet and cook until they begin to soften, about 2-3 minutes. Stir in spinach leaves and cook until wilted. Reduce heat to low and pour in heavy cream. Let it simmer for 2-3 minutes. Add cooked pasta to the skillet and toss to coat in the creamy sauce. Sprinkle grated Parmesan cheese over the pasta and stir until melted and combined. Season with salt and pepper to taste. Serve hot, garnished with fresh basil leaves. Enjoy!
