A smoky twist on a delicious Shepherd's Pie, perfectly cooked over a Traeger smoker.
Ingredients: 2 lbs ground lamb. 1 large onion, diced. 3 carrots, peeled and diced. 2 cloves garlic, minced. 1 cup frozen peas. 1 cup beef broth. 2 tbsp tomato paste. 2 tbsp Worcestershire sauce. 2 tsp dried thyme. Salt and pepper to taste. 4 cups mashed potatoes.
Instructions: Preheat Traeger smoker to 350F. In a large skillet, brown the ground lamb over medium heat. Add diced onions, carrots, and minced garlic to the skillet. Cook until vegetables are softened. Stir in frozen peas, beef broth, tomato paste, Worcestershire sauce, dried thyme, salt, and pepper. Simmer for 10 minutes. Transfer the lamb mixture to a Traeger-safe baking dish. Spread mashed potatoes evenly over the lamb mixture, creating a top layer. Place the baking dish on the Traeger and smoke for 30-40 minutes or until the top is golden brown. Remove from the smoker and let it rest for 10 minutes before serving.
