Fable *Top Chef Edition*
The Top Chef Canada Season 3 Kick-off dinner was simply a great event at Fable. Chef Trevor Bird, self proclaimed "the best loser" of Top Chef Canada Season 2 hosted the event at his establishment Fable, invited two stars from the up-coming season, Chef Geoff Rogers and Chef Matthew Stowe to cook alongside with Chef Trevor Bird and Chef Curtis Luk.
The evening's menu consist of four courses, each course was prepared by each individual Chefs, showcasing culinary talent in Canada. First course was "Ground Level", heirloom tomato, peppers, cucumber, nettle, prepared by Chef Geoff Rogers; this dish was very refreshing and light, yet full of flavours from well seasoned mixed veggies popping in your mouth. Second dish was "Steelhead Trout", maple torched, mirepoix in textures, black garlic vinegrette, prepared by Chef Matthew Stowe; the trout was cooked to perfection super flavourful and soft, the sauces and garnishes complimented the fish beautifully. Third dish was "Peter Cottontail 2 Ways," black pudding stuffed rabbit saddle, lasagna, rabbit leg, by Chef Trevor Bird; rabbit meat was super tender and meshed well with the lasanga crust pastry and sauce; the black pudding and saddle had a rich flavour and the textures were uniquely exicuted. Forth dish was "Chocolate Au Torchon", pickled blackberries, cranberry pumpkinseed brioche by Chef Curtis Luk; very rich dark chocolate accompanied by pickled blackberries and brioche was a great way to end the meal.
The evening was a great turnout, it was a sold out event and I was fortune enough to be part of it. Events such as this one showcases the level of culinary skills and talent we have here in Canada. I hope this type of event will continue to roll out and take place in the near future; I will be ready for the next bite.
