Pro tip: when you get a pre-seasoned tri tip for grilling or smoking, get one that’s untrimmed, i.e., there’s still a nice fat cap all around it. That way you can get a nice char on it, then you move it to indirect heat/smoke and cook it the rest of the way through to your desired temperature.
