I just found this blog and was wondering, what is/is there a difference in labels like, shape shifter, polymorph, and polykin? And if each one is different do they mean more than having multiple kintypes?

More or less, they act as different lables for, overal, similar things, though with slight differences.
Shape shifter = general shapechanger
Polymorph = shapechanger typically in context of fantasy genre
Polykin = a term some people use to refer to multiple kin types on one person
