This vanilla berry cake is the best vegan treat you can get. This cake is great for any event because it smells great and tastes great. It has the freshness of mixed berries and the scent of vanilla.
Ingredients: 2 cups all-purpose flour. 1 cup granulated sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 cup unsweetened almond milk. 1/2 cup vegetable oil. 2 tsp vanilla extract. 1 tbsp apple cider vinegar. 1 cup mixed berries strawberries, blueberries, raspberries. Vegan frosting of your choice.
Instructions: Start by heating the oven to 350F 175C. A 9-inch round cake pan should be greased and floured. Whisk the flour, sugar, baking powder, baking soda, and salt together in a large bowl. On top of the dry ingredients, add the vegetable oil, vanilla extract, and apple cider vinegar. Mix until everything is smooth and well mixed. Add the mixed berries to the batter slowly. When the cake pan is ready, pour the batter into it and spread it out evenly. After the oven is hot, bake it for 30 to 35 minutes, or until a toothpick stuck in the middle comes out clean. Take the cake out of the oven when it's done and let it cool on a wire rack. After the cake has cooled, frost it with your favorite vegan frosting and add more berries if you want.
