Ingredients: 2 cups all-purpose flour. 4 large eggs. 2 cups whole milk. 1/4 cup granulated sugar. 1/4 cup unsalted butter, melted. 1 teaspoon vanilla extract. 1/4 teaspoon salt. 1 cup heavy cream. 1/4 cup powdered sugar. 1 teaspoon vanilla extract. Fresh berries for garnish optional.
Instructions: In a blender, combine the flour, eggs, milk, granulated sugar, melted butter, vanilla extract, and salt. Blend until smooth, about 30 seconds. Let the batter rest for 30 minutes at room temperature. Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the skillet with butter or cooking spray. Pour 1/4 cup of the crepe batter into the skillet, swirling it around to evenly coat the bottom. Cook for about 1-2 minutes, or until the edges start to lift and the crepe is lightly golden. Flip the crepe and cook for another 1-2 minutes on the other side. Repeat with the remaining batter, stacking the cooked crepes on a plate and covering them with a clean kitchen towel to keep them warm. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. To assemble the crepe cake, place one crepe on a serving plate and spread a thin layer of whipped cream on top. Repeat this process, stacking the crepes and spreading whipped cream between each layer until you've used all the crepes. Chill the crepe cake in the refrigerator for at least 2 hours to set.
