𝗕𝗮𝘀𝗶𝗰 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 𝗶𝗻 𝗕𝗿𝗲𝗮𝗱 𝗠𝗮𝗸𝗶𝗻𝗴: 1. 𝗙𝗹𝗼𝘂𝗿: Flour is the main ingredient used in bread making. Weight/Ratio of all other ingredients is calculated on the basis of weight of the flour. When we water/liquid to the flour it forms gluten. Gluten is the skeleton of the bread. Professional uses bread flour/ strong white flour in bread making because it has higher amount of protein. But for this series we will be using all-purpose flour/maida only. 2. 𝗬𝗲𝗮𝘀𝘁: It is a living plant organism. It breaks down the starch and sugar in food material into CO2 which makes the bread rise and gives it the texture. You can yeast in fresh solid form which can be freeze up to 6 months and dry form which is instant active dry yeast as shown in the picture. 3. 𝗙𝗮𝘁 (𝗕𝘂𝘁𝘁𝗲𝗿 𝗼𝗿 𝗢𝗶𝗹): Fat helps in improving the softness of the bread and makes the dough more pliable. You can butter for its flavour, oil if you don't want any empowering flavour. I generally use olive oil in my bread. Never use fat in excess - reduces the volume of the bread. 4. 𝗦𝘂𝗴𝗮𝗿: Sugar is what yeast eat. Sugar helps in growing yeast, fermentation and then in producing CO2. It also helps in improving the overall bread flavour. 5. 𝗦𝗮𝗹𝘁: Salt is there to enhance the over all bread flavour. Never add salt directly to the yeast as it will kill it and your bread will not rise. So always seperate yeast and salt in the dough. 6. 𝗟𝗶𝗾𝘂𝗶𝗱: Here you can use water/milk or both as liquid. Liquid hydrates the dough and that plays a very important role in the overall dough texture. .
