Vegan Dinner: Soy ravioli with beet greens, garlic, red onion and ground cashew; Quinoa salad (including black beans and fresh corn) with a sunflower seed cream dressing.
This post is inspired by friends who seem to believe that a family moving to vegan home cooked meals (thanks to our 16 year old vegan) is cause for great gastronomic lamentations. In fact, it has led to an extraordinary flowering of taste, texture, and damn good food. But when A. said to me, "That great! So what are you eating?" I had no answer because my wife is the vegan genius and I'm just a dumb gnosher. A: This is my answer.
Not a great photo—and next time I'll take it before dinner, not after we've demolished the goods—but you gotta start somewhere.
