Enjoy a sweet treat with a flaky, buttery crust and the sweetness of ripe peaches in these vegan peach tartlets. These are easy to make and even easier to enjoy. They're great for any event.
Ingredients: 2 cups all-purpose flour. 1/2 cup vegan butter, chilled and cubed. 1/4 cup cold water. 4 ripe peaches, sliced. 1/4 cup brown sugar. 1 tbsp cornstarch. 1 tsp vanilla extract. 1/4 tsp ground cinnamon. 1/4 cup maple syrup.
Instructions: Preheat oven to 375F 190C. In a food processor, pulse flour and vegan butter until mixture resembles coarse crumbs. Gradually add cold water, pulsing until dough comes together. Roll out dough on a floured surface and cut into small circles to fit tartlet pans. Press dough into tartlet pans and prick bottoms with a fork. In a bowl, toss sliced peaches with brown sugar, cornstarch, vanilla extract, and cinnamon. Divide peach mixture among tartlet pans. Bake for 25-30 minutes, or until crust is golden brown and peaches are tender. Drizzle tartlets with maple syrup before serving.
